Beetroot Cake

Beetroot is easy to grow ,extremely good for you and adds a nice texture to cakes

8 oz S.R. Flour
2 tsp Baking Powder
5 oz Sugar
¼ Pint Vegetable Oil
2 Eggs Beaten
2 tsp Mixed Spice
3 - 4 oz Sultanas
7oz Grated Raw Beetroot

1. Set the oven at 150 degree Fan (or 180c, 350F, Gas Mark 4)
2 Grease and Line a 2lb loaf tin or a 8” Cake tin. (Loose bottom is good.)
3 Mix together all the ingredients except beetroot and sultanas. A strong mixer is recommended as
The mixture will be very stiff.

4 Mix in the Beetroot and Sultanas
5 Spoon the mixture into the prepared tin.
6 Bake for 1 – 1 ¼ hours until a metal knife comes out clean.
7 Cool on a wire rack. After, about 10 minutes turn the cake out of the tin.
